Carrot Ginger Salad Dressing
from Lydia Hwang

2 large or 4-5 small carrots. Peel & grind to a fine texture
1/2 small Spanish onion. Grind very fine, separately.
Thumb size piece of ginger. Pell grind very fine.
1/4 Cup orange juice concentrate (not dilluted)
1 Tblsp. lemon or lime juice (fresh)
1 garlic clove smashed until smooth
1/2 tsp. coriander powder (optional)
1/4 tsp. white pepper (less if desired)
1/4 tsp. sesame oil

Combine carrots, onion, ginger. Add remaining ingredients. Add more o.j. if too thick. Dressing will thicken when refrigerated.
